This week, we’re bringing you another “Hustle Approved” snack to satisfy those crunchy, savory cravings. Added bonus, it’s a no-cook recipe that is great for everything from housewarming parties to watching the game in your sweats.
Crudité Platter with Homemade “Ranch” Dip
2 bell peppers (orange, yellow or red)
1 cup sugar snap peas
2 carrots, peeled and quartered (organic if you can!)
1 cucumber, peeled and seeded
5-6 radishes, quartered
For the Dip:
3/4 cup plain Greek yogurt
1 tablespoon fresh chopped basil
1/2 tablespoon of fresh chives, chopped
1/2 tablespoon of fresh dill, chopped
2 teaspoons white wine vinegar (or fresh lemon juice)
2 tablespoons minced shallots or red onion
Salt and fresh ground pepper, to taste
Whisk together all ingredients for the dip in a bowl until smooth. Set aside
Wash and prepare veggies, arrange them on your favorite platter.
Serve with chilled dip on the side!
** Feel free to use any veggies you like in this platter! Also, if the dip is a little too thick, cut it with plain yogurt, about 2 tablespoons.
