Grilled Chicken Parmesan Zoodles

Hey Friends!
We’ve been experimenting the Real Fit kitchen and we HAD To share this clean + green recipe with you. It’s so delicious, even those “zoodle haters” will love it!

Grilled Chicken Parmesan with Zoodles and Marinara Sauce

Grilled Chicken:

4 chicken breasts, thinly sliced                                                                                                     Salt, pepper, oregano, basil, garlic powder to taste                                                                       2 tablespoons Parmesan cheese

Season chicken with above and let sit for about 15 minutes. Begin preparing sauce.
Sauce:
1 large can crushed tomatoes
1 small can tomato sauce
1 small onion, finely chopped
1 tablespoon EVOO
Salt, pepper, oregano, basil, garlic to taste
Add chopped onion to EVOO in  pan. Cook until softened. Add sauce and seasonings. Cook on low-medium heat for about 30-40 minutes. While sauce is cooking, start spiraling your “zoodles”
Zoodles:
2-3 fresh zucchini
Spiral zucchini into a bowl. Let stand. If you prefer to cook them, you can quickly pop them in the micro for 2 minutes. Let sit and drain any moisture from them. You can always roast in the oven for about 10 minutes or you can even lightly saute them on the stove top – your choice!
Preparation: 
While the zucchini is resting, grill that chicken! The sauce should be ready once the chicken is being taken off the grill. Assemble those plates! Zoodles and sauce on the side of that perfectly juicy grilled chicken – yummy!
Notes from Chef Heather
*Major cooking tip – I like to make a large batch of sauce (double the above) and freeze half! Next time I need some “quick” marinara, it’s in the freezer. Take it out, defrost, and voila!
* For serving: Top sauce with a sprinkle of Parmesan cheese, if desired.
*Time permitting, your sauce can simmer for about an hour to really marry the flavors!
*IF you must, you could use sauce in a jar – just remember that organic is best, watch for added sugars and ingredients you don’t understand or can’t pronounce
